Bold, fresh, and packed with umami: These king oyster mushrooms on Swiss chard combine intense roasted flavors, a savory marinade, and a touch of heat in one delicious dish. The mushrooms are scored to absorb the mixture of soy sauce, lime, honey, and chili, then seared until golden brown on the plancha.
Ingredients
-
2 large king oyster mushrooms
-
1 bunch Swiss chard
-
Soy sauce
-
1 tsp honey
-
1 lime
-
Chili
-
Optional: sesame seeds, sprouts
preparation
Prepare the Swiss Chard
Wash the Swiss chard. Remove the stems and roughly tear the leaves into pieces.
Prepare the Umami Sauce
Mix the lime juice, soy sauce, honey, and sliced chili until well combined.
Sear the Mushrooms
Score the king oyster mushrooms so they can absorb the marinade better. Let them marinate in the umami mixture for about 15 minutes. Then sear them with a little oil on the Pyron Plancha until golden brown.
Cook the Swiss Chard
Briefly sauté the Swiss chard leaves in a pan until wilted. Season with a little salt and lime juice.
Serve
Arrange the Swiss chard on a plate and place the umami king oyster mushrooms on top. Garnish with sesame seeds and sprouts if desired.
