preparation
Prepare the Pico de Gallo
Finely dice tomatoes, red onion, chili, and coriander. Mix with lime juice, a little olive oil, salt, and pepper.
Grill the Avocados
Halve the avocados and remove the pit. Lightly brush the cut sides with oil and grill on a grill or plancha for 3–4 minutes until nice roasted flavors develop.
Serve
Fill the warm avocados with pico de gallo and serve immediately.
