preparation
Prepare whipped feta
Crumble feta, Greek yogurt, a bit of lime juice, lime zest, and a splash of olive oil in a bowl and mix roughly. Small feta chunks add texture to the dish.
Cook asparagus
Wash the green asparagus and trim off the woody ends. Sear in a hot pan or on a plancha with a little olive oil until lightly browned and still crisp.
Season
Refine the asparagus with salt and olive oil.
Plating
Spread whipped feta on a plate, arrange the warm asparagus on top, and drizzle with lime juice. Optionally top with chili, herbs, or sprouts.
