Hearty shakshuka in Grillaholic style: spicy Merguez sausages meet an aromatic tomato and bell pepper sauce with oriental spices and perfectly set eggs. This simple cast iron pan recipe is ideal for the grill or outdoor cooking and delivers intense flavors with rustic enjoyment.
Ingrédients

4–5 Merguez sausages

1 large onion
-
2 garlic cloves
-
1 red bell pepper
-
1 can chopped tomatoes (400 g)

2–3 eggs

1 tsp cumin
-
1 tsp smoked paprika powder

½ tsp chili flakes (to taste)

Salt & pepper

Olive oil
-
Fresh parsley or cilantro
- Optional: fresh baguette for dipping
Préparation
Heat a cast iron pan on the grill over medium direct heat.
Roughly chop the Merguez sausages and add them to the pan with a little olive oil.
Slice the onion, add it to the sausages, and fry everything together until well browned.
Add garlic and bell pepper and briefly sauté.
Stir in tomatoes and spices and let the shakshuka simmer gently for 10–15 minutes.
Make small wells, crack in the eggs, and let them set with the lid closed.
Top with fresh herbs and serve directly from the pan.
