This traditional dessert becomes a true specialty in outdoor cooking: a soft, slightly pudding-like pancake, refined with fresh blueberries and served with cloudberry jam. Discover the recipe and enjoy Nordic sweetness over an open fire.
Ingrédients

3 eggs

600 ml whole milk

250 g wheat flour

2 tbsp sugar

1 tsp salt

2 tbsp butter (plus a little for the pot)

1–2 handfuls blueberries
Préparation
Batter
Whisk together eggs, milk, sugar and salt
Stir in flour until smooth and lump-free
Melt butter and add it to the batter
Let the batter rest for 10–15 minutes. This is important for the typical soft, pudding-like texture.
Note: The batter is much thinner than regular pancakes… that is correct.
Fire & Dutch Oven
Prepare embers (no open flame, gentle heat preferred)
Place Dutch oven lid on the grill grate and melt some butter
Toss blueberries lightly in the butter
Pour in the batter (about 2–3 cm high)
Let it bake for 5–7 minutes until golden brown. Only when it is well browned can it be easily flipped.
Flip once and bake again for 5–7 minutes until nicely browned. Done!
