Beef and Broccoli is an Asian-American classic. This recipe shows you how to prepare tender beef with broccoli.

700 g Jack's Creek Black Angus flank steak

450 g broccoli

120 ml warm water

25 g fresh ginger

2 garlic cloves

2 tbsp olive oil

2 tbsp sesame oil

6 tbsp soy sauce

3 tbsp cane sugar

1/2 tsp 9 Pepper Symphony spice blend

1 tsp sea salt

1.5 tbsp cornstarch

2 tsp toasted sesame seeds
Préparation
First, cut the broccoli into small florets. They should not be too large, since the broccoli will only be stir-fried briefly and should not stay too firm afterward. Next, prepare the sauce. Peel the garlic and press it into a bowl using a garlic press. Peel the ginger, finely grate it, and add it to the garlic. Add the sugar and pour in the warm water so the sugar dissolves and the flavors can develop. Stir the sauce well. Once the sugar has dissolved, add the soy sauce, pepper, sesame oil, and finally the cornstarch. Stir again thoroughly and set the sauce aside.
Trim the flank steak and cut it into strips about 5–6 mm wide. It is important to cut across the grain, not along it, so the steak strips stay tender. Once the steak is sliced, continue at the grill or stove. We prepared our Beef and Broccoli on a Severin SEVO GTS electric grill in a cast iron pan (Petromax fp30h). Heat the grill and pan to about 200°C, then add a little oil. Add the broccoli and fry for about 3–4 minutes. Remove the florets from the pan and set them aside in a bowl.
Now continue with the steak strips. Increase the grill temperature to 300°C, season the meat with salt, and sear it in the hot pan with a little oil for a few minutes until nicely browned. Once the flank steak is seared, reduce the heat to about 180°C. Then add the sauce while stirring constantly.
Because of the cornstarch, the sauce thickens quickly. Add the pre-cooked broccoli florets immediately and toss everything together well. Finally, sprinkle some toasted sesame seeds over the meat and serve. Basmati rice makes an excellent side dish.
