Bake Blueberry Muffins by the Campfire – in the Reflector Oven or Muffin Pan

Blueberries are not only rich in vitamin C, potassium, zinc, folic acid, and iron, but also contain tannins and plant pigments (polyphenols). The small blue berries taste delicious and are therefore perfect for muffins baked in a cast iron muffin pan. When the reflector oven is placed next to the fire, their delicious aroma spreads throughout the entire campsite. Here we show you how to bake blueberry muffins yourself.
Ingrédients
- 4 eggs
- 250 g sugar
- 1 packet bourbon vanilla sugar
- 1 pinch salt
- 200 g cream cheese, mascarpone, or Philadelphia
- 325 g flour
- 1 packet baking powder
- 125 g butter, melted
- 250 g blueberries
Préparation
Beat the eggs with the sugar until fluffy.
Add the cream cheese and mix well.
In a second bowl, mix the flour and baking powder.
Briefly combine the dry ingredients with the wet ingredients until the dry ingredients are just moistened.
Add melted butter and blueberries, mix, and fill into the molds.
Bake in the reflector oven by the fire for about 45–55 minutes.
