Ingredients
- 10 small shallots
- 4 tsp brown sugar
- 4 tbsp balsamic
- 240 ml red wine
- One sprig each of rosemary and thyme
- Salt, pepper
preparation
Peel and quarter the shallots.
Heat a pan with a little oil over the fire and sauté the shallots in the hot oil until translucent.
Add the brown sugar and balsamic vinegar to the pan and caramelize the shallots in the sugar for a further 10 minutes over a medium heat.
Add about 160 ml of red wine - enough to cover the shallots with red wine.
Bring the red wine to the boil briefly, then reduce the heat and simmer gently for about 20 minutes.
Add the rest of the red wine and reduce to the desired syrupy consistency for a further 15-20 minutes, depending on the heat. Stir regularly.
Pluck the rosemary needles from the stalk and finely chop together with the thyme.
Finally, stir in the fresh herbs and season the red wine shallots with salt and pepper to taste.
