This grilled cheese sandwich with pumpkin is pure coziness between two crispy slices of bread. Creamy pumpkin mash, sweet-spicy onions and melting mountain cheese combine into a hearty taste experience. Perfect for a cozy autumn day – quick to make and irresistibly delicious!
Ingrédients
- 4 slices white bread
- 50 g butter
- 100 g mountain cheese
- 1 bunch young leeks
- 1 small Hokkaido pumpkin
- salt
- 2 red onions
- 1 tbsp honey
- 1 tbsp wholegrain mustard
- 1 pinch salt
- 100 g pumpkin
- 1 tbsp olive oil
- 1 onion
- 1 clove garlic
- 20 g ginger
- 20 ml white vinegar
- 100 ml white wine
- 2 tbsp honey
- ½ red chili
- 40 g mustard seeds

Préparation
Sweet red onions
Peel the onions and cut them into fine cubes. Season with salt, honey and wholegrain mustard and let them steep.
Pumpkin mash
Wash the pumpkin, halve it, remove the seeds and cut it into wedges. Season all over with salt and roast on the grill rack of the Atago. After about 30 minutes, the pumpkin is so soft that the flesh can be mashed with a fork. Depending on the variety, the skin may need to be removed first. With Hokkaido pumpkin, the skin can be eaten. Season the finished pumpkin mash and add more salt if needed.
Pickled mustard pumpkin
Peel the onion and pumpkin and cut into very fine cubes. Slice the chili pepper into rings. Sauté onion and pumpkin cubes in olive oil without browning. Add white wine and vinegar and bring briefly to a boil. Grate the fresh ginger and add it. Season with honey and salt. Finally add the chili pepper.
Young leeks
Clean the young leeks, lightly salt them and grill for about 5 minutes.
Toast slices
Now butter the toast slices on all sides and spread pumpkin mash on one side. Distribute the sweet-and-sour pumpkin and sweet onions on top, sprinkle with grated mountain cheese and close with another buttered slice of toast. Grill in a preheated sandwich press for about 5 minutes on each side.
Plating
Cut diagonally and garnish with grilled leeks.
