Ingredients
- 600g flour (type 405)
- 350ml water (lukewarm)
- 100g herb butter
- 42g yeast (1 cube)
- 1 tsp sugar
- 2 tsp salt
preparation
Add the sugar and yeast to the lukewarm water and stir until the yeast has dissolved.
Put the flour and salt in a large bowl and add the yeast and water mixture. Knead everything into a smooth dough.
Cover the dough with a damp cloth and leave to rise in a warm place for 1 hour until it has doubled in size.
In the meantime, heat the herb butter in the microwave or in a saucepan over a low heat until soft.
Knead the dough briefly on a floured work surface and then roll out into a rectangle.
Spread the rectangle with the herb butter and cut into strips approx. 6 cm wide.
Grease a loaf tin with a little herb butter.
Fold the strips of dough together like an accordion and place in the loaf tin.
Cover the dough with a damp cloth and leave to rise in a warm place for another 30 minutes until it has risen a little.
Prepare the grill for indirect heat and switch on to 180 degrees.
Bake the bread at 180 degrees for 50-60 minutes until golden brown.
Turn the bread out of the tin and leave to cool on a cooling rack.
Recipe note
Tips:
- For a more aromatic bread, you can add fresh herbs such as parsley, chives or rosemary to the herb butter.
- If you don't have a grill, you can also bake the bread in the oven. Preheat the oven to 180 degrees and bake the bread in the middle shelf position for 50-60 minutes.
- The bread tastes best lukewarm.
