Chicago-style pizza, also known as deep dish pizza, has been rocking the pizza scene since it was supposedly created in 1943 at Pizzeria Uno in Chicago. With its thick crust encasing an oasis of cheese, tomato and sausage, it sets the standard. There is also the Stuffed Pizza, a tribute to the Italian Easter cake Scarciedda, and the Pan Pizza from Pizza Hut. We opted for the latter, with an exciting twist - a Pan Pizza with a tempting stuffed cheese crust, prepared in the Petromax Fire Skillet ft30.
Ingredients
- 500g flour type 405 + some for the work surface
- 220ml water (lukewarm)
- 1/2 cube yeast
- 1.5 tsp salt
- 30ml olive oil
- 1 egg
- 150g cheddar cubes
- 400g chopped tomatoes
- 1 small onion
- 2 cloves garlic
- 1 tbsp olive oil
- 1 TL Oregano
- 1 TL Basilikum
- Salz
- Pfeffer
- Mushrooms
- Pepper
- Onion
- 150g pizza cheese

Prepare dough:
Dissolve the sugar and yeast in lukewarm water.
Knead into a smooth dough with the flour, salt and olive oil.
Cover and leave to rise in a warm place for 1 hour.
Prepare the grill:
Preheat grill to indirect heat of 220 degrees.
Preparing the sauce:
Finely chop the garlic and onion.
Heat the olive oil in a pan and fry the onion and garlic until translucent.
Add the chopped tomatoes and herbs.
Simmer for 15 minutes at a low temperature and season with salt and pepper.
Prepare the topping:
Remove the seeds from the peppers and cut into strips.
Peel the onion and cut into rings.
Clean and slice the mushrooms.
Continue working the dough:
Knead the dough again and leave to rise for 30 minutes.
Moisten the cast iron pan with olive oil.
Roll out the dough to over the edge of the pan.
Whisk the egg and brush the edge of the pastry with it.
Spread the cheddar cubes around the edge.
Fold the edge of the pastry inwards over the cheese and press firmly onto the pastry base.
Topping the pizza:
Spread the pizza sauce on the dough base.
Cover with pizza cheese.
Top with peppers, onions and mushrooms.
Bake pizza
Bake the pizza at 220 degrees for approx. 30 minutes.
Recipe note
Tips:
- For a crispier edge, leave the dough to rise a little longer.
- Add a little cream or sour cream for an even creamier sauce.
- For a heartier topping, add diced salami, ham or bacon.
