Chicago-style pizza, also known as deep dish pizza, has been rocking the pizza scene since its supposed creation in 1943 at Pizzeria Uno in Chicago. With its thick crust that surrounds a cheese-tomato-sausage oasis, it sets the standard. There is also stuffed pizza, a homage to the Italian Easter pie casserole Scarciedda, and the pan pizza from Pizza Hut. We chose the latter, with an exciting twist – a pan pizza with an irresistible stuffed cheese crust, prepared in the Petromax fire pan ft30.
Ingredients
- 500g flour type 405 + some for the work surface
- 220ml water (lukewarm)
- 1/2 cube yeast
- 1.5 tsp salt
- 30ml olive oil
- 1 egg
- 150g cheddar cubes
- 400g chopped tomatoes
- 1 small onion
- 2 cloves garlic
- 1 tbsp olive oil
- 1 tsp oregano
- 1 tsp basil

Prepare the dough:
Dissolve sugar and yeast in lukewarm water.
Knead with flour, salt, and olive oil into a smooth dough.
Let rise covered in a warm place for 1 hour.
Prepare the grill:
Preheat the grill to indirect heat of 220 degrees.
Prepare the sauce:
Finely chop the garlic and onion.
Heat olive oil in a pan and sauté the onion and garlic until translucent.
Add chopped tomatoes and herbs.
Simmer for 15 minutes on low heat and season with salt and pepper.
Prepare the toppings:
Remove seeds from the bell pepper and cut into strips.
Peel the onion and cut into rings.
Clean the mushrooms and slice them.
Continue working the dough:
Knead the dough again and let it rise for 30 minutes.
Grease the cast iron pan with olive oil.
Roll out the dough in it so it extends over the edge of the pan.
Whisk the egg and brush it onto the edge of the dough.
Distribute the cheddar cubes along the edge.
Fold the edge of the dough inward over the cheese and press firmly onto the base.
Top the pizza:
Spread pizza sauce on the dough base.
Cover with pizza cheese.
Top with bell pepper, onion, and mushrooms.
Bake the pizza
Bake the pizza at 220 degrees for about 30 minutes.
Recipe note
Tips:
- For a crispier crust, let the dough rise a bit longer.
- For an even creamier sauce, add a little cream or sour cream.
- For a heartier topping, add diced salami, ham, or bacon.
