Ingredients
- 6 Wild prawns
- 2 EL peanut pesto
- 1 Shallot
- 1 Garlic clove to taste
- Oil for roasting
- 50g Basilikum
- 30g Petersilie
- 75g Erdnüsse geröstet
- 400ml Olivenöl
- Salz
- 1 small clove of garlic
- 20g Grana Padano
- 4 eggs
- 25ml cream
- 2 shallots
- 1 small clove of garlic
- ¼ bundle of chives
- 1 Avocado
- 1 Chili
- 1 Rote Zwiebel
- 1 Tomate
- 2 EL Olivenöl
- 1 tbsp crunchy peanut butter
- ¼ bunch coriander
- 2 tsp salted peanuts (chopped)
- 1 tbsp black sesame seeds
- ¼ bunch coriander

Peanut pesto
Peel the garlic, rinse the herbs and carefully shake dry.
Crush all the ingredients as finely as possible in a mortar and season with salt.
Avocado salsa
Peel the red onion and chop very finely. Deseed the chili, cut lengthwise into fine strips and then cut crosswise into fine cubes. Finely dice the tomato. First crush the peanuts with a knife and then chop finely. Finely chop the coriander.
Cut the avocado lengthways around the stone with a knife and carefully turn the two halves against each other. Remove the stone and place the flesh in a bowl. Add all the ingredients, season with salt and mix with a fork.
Scrambled eggs with prawns
Beat the eggs in a bowl, mix in the cream and season with salt. Finely chop the shallots and chives. Wash the prawns and pat dry well.
- Heat the oil in a pan and first add the chopped shallot, a crushed clove of garlic to taste and then the prawns. Fry for 3-5 minutes on each side. Then add the pesto and put the prawns to one side.
- For the scrambled eggs, fry the chopped shallots in another pan. Add the egg mixture and fry, stirring carefully, until it has set but is still creamy and moist. Fold in the chopped chives.
Place the scrambled eggs on the plate and top with the king prawns.
