Ingredients
- 1.2 kg beef
- 400 g minced meat (pork)
- 400 g chorizo
- 3 onions (medium)
- 2 garlic cloves
- 4 chili peppers
- 200 g tomato paste
- 2 tsp cumin
- 3/4 tsp tarragon (ground)
- 3/4 tbsp sugar
- 3/4 tbsp salt
- 3/4 tbsp pepper
- 1, 5 tbsp oregano (grated)
- 2,5 tbsp spice mix (chili powder)
- 2.5 tbsp parsley (chopped)
- 3/4 tbsp Worcester sauce
- 3/4 tbsp vinegar
- 120 g dark chocolate, chopped
- 500 ml beer
- 300 ml malt beer
- 3 cans red beans
preparation
Peel the onions and garlic cloves and finely chop with the chillies. Cut the beef into small cubes and slice the chorizo.
Sear the beef in the heated Dutch oven and then take it out again.
Fry the mince together with the onions and garlic. Then add the remaining ingredients (except the parsley) to the Dutch oven with the beef and put the lid on.
Simmer the chili con carne for about 120 minutes, stirring occasionally. Add the parsley just before serving.
