Ingredients
- 2 tbsp oil
- 1 onion
- 4 eggs
- 4 tbsp milk
- 2 tbsp Parmesan
- salt, pepper, nutmeg, thyme

To taste: dumplings from the day before, Brussels sprouts, chestnuts, cranberries
preparation
Dice the onion. Wash the Brussels sprouts and cranberries, chop the chestnuts and cranberries.
Fry the onion and dumplings in a pan in a little hot oil. After a short time, add the Brussels sprout leaves, chestnuts and cranberries and fry.
Whisk the eggs with the milk, but do not stir until frothy. Season with salt, pepper, nutmeg and thyme.
Add the egg mixture and cook for approx. 7-8 minutes in a fan oven (e.g. Atago & fan dome) until the egg has set.
Sprinkle with Parmesan cheese if desired.
