600 g ground beef (recommended 80/20 fat ratio)

4 burger buns

4 slices Pepper Jack cheese

1 large onion, sliced

Salt and pepper or burger seasoning to taste

A little mayonnaise for toasting the buns

120 g mayonnaise

120 g crispy fried bacon (chopped)

2 tbsp ketchup

1 tbsp hot honey
-
1 tbsp yellow mustard

1 tsp chili flakes
-
1 tsp chives, finely chopped

½ tsp black pepper

Cut bacon into small pieces and fry until crispy, then set aside.
Slice onions and cook them in the bacon fat until soft and lightly browned.
Mix all ingredients for the baconnaise sauce thoroughly.
Form the ground beef into 4 balls of about 150 g each.
Place the balls on a very hot griddle or pan and smash them flat.
Season the patties and cook for about 3 minutes until a crust forms.
Flip, add cheese on top, and cook until melted.
Spread a little mayonnaise on the buns and toast them until golden brown.
Assemble the burger: spread baconnaise on the bottom bun, add the patty, onions, extra sauce, and finish with the top bun.

Tip:
For the perfect crust, smash the patties on a very hot cast iron griddle.
